Hvert år tager vi i skoven med børnene den sidste weekend i november og samler pyntegrønt, hvorefter vi tager hjem og får gløgg og æbleskiver. Jeg må desværre indrømme, at det ofte er købte æbleskiver, og nogen gange endda færdigblandet gløgg, men i år ville jeg have gang i æbleskivepanden igen. Den har ligget ubrugt i utroligt mange år, til min mands store ærgrelse. Altså han elsker købte æbleskiver, men kunne ikke forstå, at jeg ikke bare smed panden ud! Faktisk prøvede jeg kun at lave æbleskiver de første par år efter at jeg flyttede hjemmefra, da de begge gange mislykkedes, til trods for at jeg sagtens kunne finde ud af at lave dem som barn :/
Nu faldt jeg over en ny opskrift jeg ville prøve, og de var lækre (omend æblet næsten ikke kunne smages), så nu måtte jeg hellere se at få den lagt på bloggen, så der forhåbentlig ikke går 20 år inden jeg prøver igen. Opskriften er Anne Hjernøe's mens opskriften på gløggen (ligesom de fleste andre juleopskrifter jeg laver) er en håndskreven fra min julesamling, så jeg aner ikke hvor jeg har fået den fra, eller hvor meget jeg har ændret i den:
Opskrift på Æbleskiver med æblestykker og kardemomme: ca 45-50 stk
5 dl hvedemel
1/2 tsk Maldon-salt
3 tsk lyst rørsukker
1 1/2 tsk stødt kardemomme
1 tsk natron
Friskrevet skal fra en ubehandlet citron
Friskrevet skal fra en ubehandlet appelsin
3 æg, delt i blommer og hvider
4 dl kærnemælk
4 spsk let afkølet smeltet smør
1 skrællet æble, skåret i små stykker
Smagsneutral olie til bagning
Bland mel, salt, sukker, kardemomme, natron og citrusskal sammen i en skål. Pisk herefter æggeblommerne sammen med kærnemælken og rør det godt ud i melblandingen. Rør dejen grundigt gennem igennem, tilsæt det smeltede smør og lad dejen hvile i 1/2 times tid. Pisk æggehviderne stive og vend dem i dejen.
Varm æbleskive panden godt op. Kom lidt olie i hullerne til den første omgang æbleskiver og fyld hullerne trekvart op med dej. Kom et lille stykke æble ned i dejen. Når dejen begynder at stivne, vendes æbleskiverne; brug et træspyd el strikkepind til formálet. Vend dem gerne flere gange, og bag dem til de er helt gyldne og sprøde.
Da der er smeltet smør i dejen, burde der kun være grund til at komme fedtstof på panden, første gang man fylder hullerne med dej. Spis de færdigbagte æbleskiver med kryddersukker.
Opskrift på Sød og mild julegløgg:
1 ubehandlet appelsin
1/2 L vand
1 lille stykke hel kanel
5 hele nelliker
1 tsk hel kardemomme
1 flaske rødvin (Kan erstattes med rød frugtsaft, for at være mere børnevenlig/alkoholfri)
3 dl sød, rød frugtsaft
1/2 dl sukker
1 dl blandet, gul frugtsaft (Kan erstattes med konc. appelsinjuice el friskpresset appelsinjuice)
Tilbehør: Rosiner og skoldede, smuttede mandler.
Skyl appelsinen i varmt vand, tør den omhyggeligt og skræl den med en kartoffelskræller (undgå det hvide). Bring vandet i kog med appelsinskal og krydderier. Tag gryden af varmen og rør vin, saft og sukker i. Læg låg på gryden og lad den trække i mindst 2 timer. Si den gennem et kaffefilter og varm den godt op inden servering (må dog IKKE komme i kog).
Træk eller pil den bløde, hvide skal af appelsinen og skær den i skiver og del hver skive i kvarte. Når gløggen skal serveres, lægges appelsinstykkerne i bunden af en glasbowle sammen med snittede mandler og rosiner, og gløggen hældes over.

Pole Dancing Kage/Pole Dancing Cake
Manden skulle også lige have en kage herhjemme på sin fødselsdag. Da jeg i sin tid ønskede mig kagebøger med Debbie Brown i fødselsdagsgave (var betaget af hendes eventyr kager), fik jeg en bog med 3 pole dancere udenpå, og så kunne jeg jo godt regne ud, at det ikke var Askepot's karet han skulle have...
My husband deserved a cake for his birthday of course. When he asked me what I wanted for my last birthday, I said cakebooks and that I really liked Debbie Brown's books (I loved her fairy tale cakes). So of course he got me a book with 3 pole dancers on the cover, so I figured he really didn't want Cinderella's carriage for his birthday....
Desværre fik jeg en rystende nyhed, mens jeg var ved at pynte kagen, og kunne ikke koncentrere mig om at få den færdig, hvilket jeg godt kan ærgre mig over nu - især når jeg havde brugt rigeligt tid på forarbejdet. Den mangler detaljerne, finish, kanter m.m., men jeg valgte til sidst bare at gøre det vigtigste som manglede - nemlig male ansigtstræk på og lave håret. Jeg skal hilse og sige, at ingen af de to dele er særlig smart at lave, når man bogstaveligt talt ryster på hænderne! Da jeg endelig var færdig, og kun ville børste en enkelt RI krumme af der var faldet ned, præsterede jeg at ramme den foreste pige, som tabte halvdelen af sit hår :/
Unfortunately, I got some distrurbing news while I was decorating the cake. I was unable to focus on finishing the cake, which of course annoys me a bit now - especially since I spent plenty of time preparing for this cake. It lacks details, finish, borders etc, but in the end I just chose to do the most important missing things - painting facial features and piping the hair. Btw, neither of those tasks are suitable to do, when your hand is literally shaking - just in case anyone was wondering :P When I finally finished, and just wanted to brush of a single crumb of RI that had fallen down, I managed to knock of half the blond's hair :/

The cake was made using Cocoa Sponge Cake Layers with White Chocolate Cream with Dajm and Forrestfruit Mousse.
Opskrift på Kakao-lagkagebunde/Cocoa Sponge Cake Layers:
9 æg/eggs
200 g flormelis/powdered sugar
100 g majsstivelse/cornstarch
100 g hvedemel/flour
1 1/2 tsk/tsp bagepulver/baking powder
Pisk æggeblommerne lyse of luftige sammen med flormelis (ca 5 min). Bland de tørre ingredientser og pisk dem hurtigt i dejen. Pisk hviderne stive i en ren, tør skål. Pisk ca 3 spsk stive æggehvider i dejen, og fold så forsigtig resten af æggehviderne i dejen.
Dejen kommes i en springform med bagepapir i bunden og bages ved 200 grader C i ca. 15-20 min. Når kagen er bagt og kølet af kan den deles i 2-3 bunde alt afhængig af størrelsen på formen.
Beat eggyolkes with the powdered sugar for approx. 5 minutes. Mix the dry ingredients and whisk them in the batter just long enough to get it all mixed in. Whisk the eggwhites stiff in a separate dry and clean bowl. Beat 3 tbsp off stiff eggwhites into the batter, then gently fold in the remaining eggwhites.
Put the batter in a cake pan, lined with greaseproof paper on the bottom only, and bake it at 200 degrees C for 15-20 minutes. When the cake is baked and cooled off, it can be split into 2 or 3 layers - depending on the size of the cake pan.

Gaffeltruck og Paller Cupcakes/Forklift and Pallets Cupcakes
Manden fyldte år og skulle lige have nogen cupcakes med på arbejde. Da han kører truck størstedelen af tiden, og flytter paller rundt gav det ligesom sig selv:

2,5 dl mælk/milk
2 store æg/large eggs

Smelt den hvide chokolade, mørk muscovado sukker, smør og mælk i en gryde over svag varme. Tag gryden af og lad blandingen afkøle i ca 15 min. Tilsæt de letpiskede æg og siden sigtet mel. Hæld i cupcakes/muffin form og bag ved 180 grader i ca. 25-30 minutter.

Skattekiste Kage/ Treasure Chest Cake
Som før nævnt kom min yngste søn hjem kort før hans fødselsdag og insisterede på en Sørøver fest, så den ellers nemme 2D Avatar kage, som han havde fablet om i evigheder, passede ligesom ikke ind. Jeg ville nok være gået i panik, hvis jeg ikke havde husket at have set en fantastisk beskrivelse af en skattekiste kage lavet af cakemummy som kan ses hér. Jeg tror ikke rigtigt jeg lavede nogen ændringer, men måske et par tilføjelser, og så endte den sådan her:
As previously mentioned, my youngest son came home a week before his birthday and insisted on a Pirate party, so the otherwise easy 2D Avatar Cake, that he had been talking about for ages, suddently didn't seem to be fitting. I would have paniced if I hadn't remembered a great How-to on a treasure chest made by cakemummy which can be seen here. I didn't make many changes, and it ended up like this:
Drengen havde selv valgt kage og fyld, så det blev en Mudcake med Hvid Chokoladecreme med Dajm og Skovbær Mousse (eller "den lilla", som han sagde). Kagen er smurt op med Chokolade Smørcreme og pyntet med en blanding af Wilton's Fondant og FunCakes Chokolade Fondant. Låget er lavet af Cocopops Treats.
He chose cake and filling himself, so we ended up with a Mudcake with White Chocolate Cream with Dajm and a Forrestfruit Mousse (or "the purple" one, as he said). The cake is crumbcoated with Chocolate Buttercream and covered with a mix of Wilton's Fondant and FunCakes Chocolate Fondant. the lid is made out of Cocopops Treats.

20 g smør/butter
10 Marshmallows
150 g Cocopops
Smelt smør og Marshmallows i en tykbundet gryde over svag varme. Tag gryden af og rør Cocopops i. Hele massen hældes ud på et palminsmurt bagepapir, hvor papiret foldes over og massen formes nogenlunde mens massen stadigvæk er varm. Når den er kølet helt af (gerne på køl), skæres den til.
Melt butter and Marshmallows in a pot over low heat. Remove from heat and stir the Cocopops in. Pour all of it on greased bakingpaper, fold the paper over and use it to shape and mould the treat roughly while still warm. When it is cooled off (refrigerated is fine), you can trim the shape.
Nu var denne kage ret så afhængig af chokolademønter, og jeg kunne altså overhovedet ikke støve en enkelt op her i byen. Så jeg var glad for at huske, at de er sæsonvare til jul i England, og for en gangs skyld, kunne jeg være glad for at julen starter så tidligt, så jeg aftalte med svigermor, som alligevel ville komme et par dage før fødselsdagen, at hun tog nogen med fra England. Genialt, hvis ikke lige at hendes kuffert altså ikke var med flyet til Aalborg. Jeg ville måske have ærgret mig mere, hvis ikke jeg havde været mere bekymret over, at hendes insulin var i kufferten.... Manden blev så sendt i en chokoladebutik i Hjørring, hvor han købte rigeligt til en stykpris, vi slet ikke tør tale om. Og så kom kufferten alligevel frem før fødselsdagen....
This cake was sort of depending on chocolate coins, and I couldn't find any anywhere in town. Luckily I remembered they are seasonal in UK during Christmas, and for once I was glad that retail Christmas starts early, so I arranged for my mother in-law to bring some with her, as she was arriving a couple of days before the birthday. Great idea, if only her suitcase hadn't gotten lost. I might have been more concerned, if I hadn't been more worried about the fact that her insuline was in the suitcase! So I sent the husband on a traintrip to the closest chocolate shop where he bought plenty, at a priece pr piece that we don't dare talk about. And then the suitcase was found and delivered before the birthday anyway :P
Nu var der så også en dreng med sukkersyge til fødselsdagen, så jeg bagte nogen sukkerfri chokolademuffins (som smagte hæsligt efter min mening, så deler ikke opskrift) og lagde sammen med skovbær vendt med fløde, og overtrukket med sukkerfri chokolade. Drengen var vældig glad og spiste det hele, så måske var det alligevel tæt nok på hvad han var vant til.
Since a diabetic boy was attending the party, I baked some sugarfree chocolate muffins (which tasted absolutely horrendous in my opinion, so not sharing a recipe), mixed some whipcream and berries for the filling and coated with sugarfree chocolate. The boy was happy and ate it all, so maybe it was close enough to what he was used to anyway.
Der blev også bagt Juvel-småkager (Chocolate Chip Cookies m. sukkerklædte chips) og Dødningehoveder (mørdej m. RI), som fødselsdagsbarnet selv kunne være med til.

Pude med håndjern/Pillow with handcuffs
Min ældste datter har altså en sjov vane med at ønske min hjælp med kager til hendes veninder, liiiige når jeg har travlt med kager til andre her i huset. Så denne gang skulle der laves en extra kage udover cakepops til den 6 åriges klasse og kagen til hans fødselsdag. Hun valgte selv indhold og pynt - mit eneste krav var, at hvis hun ønskede hjælp til pynten, så skulle noget kunne laves på forhånd, og det kom så følgende ud af:
My 17yo daughter has this funny habit of wanting my help with cakes for her friends, exactly at the time I am busy with cakes for her siblings. So this time I needed an extra cake made, bsides the cakepops for the 6yo's class and the cake for his birthday party. She chose cake, filling and decorations - I only insisted that if she wanted my help with the decorating, some of it had to be able to be made in advance. And this is what we ended up with:
Hun bagte selv Drømmekage-bunde og lavede Hvid Chokoladecreme med Dajm og Hvid Chokolade Smørcreme, men så havde den travle teenager ikke tid til mere, så "måtte" jeg jo igang med at skære til, smøre op og pynte - og vi ved jo hvor meget jeg hader sådan noget, ik'? :p Nu var håndjernene jo lavet på forhånd, og er derfor egentlig også for store til kagen, men det lader vi pænt som om vi ikke ser :) Desuden smuttede hun med kagen, inden jeg fik taget et billede, men så er det jo godt at hun havde sin iPhone med. Så skal hun bare huske at kagen kun behøves at understøttes af et enkelt bord, når hun tager billeder - Det er altså lidt overkill med 2....
She baked the cake and made the filling and buttercream herself, but then the busy teenager was out of time, and I "had" to carve, butter up and decorate on my own - and we all know how much I hate to do that, right? :P Since I made the handcuffs beforehand, they are unfortunately a bit too big for the cake, but we politely pretend to not notice that :p Finally, she left with the cake, before I had a chance to take a picture, so good thing she had her iPhone.
Note to daughter: Pick one of the two tables when taking a picture next time, please :)

So this time I needed an extra cake made, bsides the cakepops for the 6yo's class and the cake for his birthday party. She chose cake, filling and decorations - I only insisted that if she wanted my help with the decorating, some of it had to be able to be made in advance. And this is what we ended up with:
Hun bagte selv Drømmekage-bunde og lavede Hvid Chokoladecreme med Dajm og Hvid Chokolade Smørcreme, men så havde den travle teenager ikke tid til mere, så "måtte" jeg jo igang med at skære til, smøre op og pynte - og vi ved jo hvor meget jeg hader sådan noget, ik'? :p Nu var håndjernene jo lavet på forhånd, og er derfor egentlig også for store til kagen, men det lader vi pænt som om vi ikke ser :) Desuden smuttede hun med kagen, inden jeg fik taget et billede, men så er det jo godt at hun havde sin iPhone med. Så skal hun bare huske at kagen kun behøves at understøttes af et enkelt bord, når hun tager billeder - Det er altså lidt overkill med 2....
She baked the cake and made the filling and buttercream herself, but then the busy teenager was out of time, and I "had" to carve, butter up and decorate on my own - and we all know how much I hate to do that, right? :P Since I made the handcuffs beforehand, they are unfortunately a bit too big for the cake, but we politely pretend to not notice that :p Finally, she left with the cake, before I had a chance to take a picture, so good thing she had her iPhone.
Note to daughter: Pick one of the two tables when taking a picture next time, please :)

Pirat Cake Pops/Pirate Cake Pops
I disse dage, så planlægger mine børn altså hvad der skal være på deres fødselsdags kage op til et halvt år i forvejen, og min nu 6-årige, havde snakket om hans ønskede Avatar-kage (Asiatisk animation serie, ikke Cameron's blå version) endnu længere end det. Og så kommer han hjem fra en børnefødselsdag en uge før sin egen, og laver hele molevitten om. Han havde været til verdens sejeste pirat fødselsdag, så nu ville han absolut også have en piratfest!!
These days my kids plan their birthday cake up to 6 months in advance, and my now 6 yo son had been talking about this Avatar Cake (Asian animation series, not Cameron's movie) that he wanted for even longer than that. Then he comes home from a birthday party he attended a week before his own, and suddenly all plans are changed. He had been at the coolest ever pirate party and of course wanted one of his own now!
Så var de godt at have både hvid, rød og sort Candy Melts hjemme. Idéen var oplagt, da jeg har set adskillige pirat cake pops før. Jeg har desværre ingen links til inspiration, da jeg kun har set dem, når jeg har kigget efter andre idéer, og derfor ikke har gemt siderne.
I had white, red and black Candy Melts, so I didn't have to think too hard about what to do, as I have seen several pirate cake pops before. Unfortunately I can't provide any inspirational links, as I have only seen them when looking for other ideas, and therefore haven't saved any pages.
Der var kun det lille bitte problem, at der er en dreng med sukkersyge i klassen. Jeg stræber altid efter at tage hensyn til allergier, sygdomme og trosretninger, men foretrækker at planlægge det, så alle får det samme. Med den indstilling, så burde jeg slet ikke lave cake pops til denne klasse, men jeg må indrømme, at når nu mine børn forventer pyntede kager m.m. til deres fødselsdag, så har jeg heller ikke lyst til at skuffe dem. Så jeg gik på kompromis og lavede en enkelt sukkerfri Sørøver Kaptajn Cakepop, med hvad jeg nu kunne finde hos den nærmeste købmand: Sukkerfri marcipanbrød, hvor jeg pillede chokoladen af, og så overtrukket med sukkerfri chokolade og pyntet med Nellie Dellies.
I only had a minor problem as one of the boys in the class is a diabetic. I have always tried to accomodate people with allergies, illnesses and religious beliefs and preferably plan it, so everyone gets the same. As such I shouldn't have made cake pops for this class at all, but I must admit that now my kids expect decorated cakes etc on their birthdays, I don't want to disappoint them. So I compromised and made a single sugarfree Pirate Captain Cakepop using what I could find at the local grocery, which wasn't much: Sugarfree marzipan coated in sugarfree chocolate and decorated with sugarfree candy.

Fodboldafslutning/Football(soccer) Season End
Det er da dejligt, at min 12 årige søn har så stor tiltro til mine evner, at han lover at jeg kan bage en Hirtshals Kage, som hans fodbold hold kunne få efter årets sidste kamp. Det ville så måske bare have været endnu mere dejligt, hvis han huskede at fortælle mig om det mere end 2 dage før, han skulle bruge den!
Of course it is nice, that my 12 yo son has such faith in my abilities, that he promises that I can make a logo cake for his football team to have after their last game this season. It might just have been nicer if he remembered to tell me more than 2 days in advance!
Nu er (mange) logokager heldigvis forholdsvis nemme at lave, og jeg havde da også både fondant og den nødvendige farve hjemme, hvilket ligesom er en forudsætning, når man bor langt væk fra den nærmeste kagebutik og uden bil, for onlinekøb kræver altså lidt mere end 2 dages varsel. Men uden længere varsel, så måtte han stadigvæk nøjes med både købebunde og købefyld, og da jeg ikke selv smagte på den, så kan jeg (heldigvis) ikke udtale mig om kvaliteten af kagen :P
Luckily many logo cakes are relatively easy to make, and this was definately one of those, and I did happen to have both the fondant and the required colour, which is sort of necessary when you live miles away from the nearest cake decorating shop and don't have a car, since buying online requires a little bit more than 2 days warning. But due to the short time available, I went with the easy solution and used both storebought cake layers and filling, and since I didn't actually taste it myself, I (fortunately) can't comment on the quality :P

Miljøvenlig Kage?/Environment Friendly Cake
Den 12 åriges far skulle bruge en logokage, da firmaet blev miljøcertificeret, og jeg var glad for at kunne hjælpe:
My 12 year old son's father needed a cake for work, when they got enviromentally certified, and I was more than happy to help:
Den ene kage var med Skildpaddecreme og enten Hindbær Mousse eller Skovbær Mousse (Når jeg ikke blogger med det samme, så kniber det med hukommelsen!), mens den anden var med Hvid Chokolade Creme med Dajm og Blåbær Fromage.
One of the cakes was with Caramel Chocolate Cream and either Raspberry or Forrestfruit Mousse (When I don't blog about it soon enough, I have memory problems :P) while the other cake was with White Chocolate Cream with Dajm and a Blueberry Mousse.
Opskrift på Hvid Chokolade Creme med Dajm/ White Chocolate Creme with Dajm:
300 g hvid chokolade/white chocolae
1/2 L fløde/whip cream
2 tsk vaniliesukker/vanila sugar
8 stk Dajm
Smelt chokoladen sammen med fløden over vandbad. Varm den godt igennem og kom den herefter på køl indtil næste dag (min. 8 timer). Husk at dække overfladen med film helt nede i skålen. Næste dag piskes den stiv sammen med vaniliesukker og den hakkede dajm kommes i.
Melt the chocolate with the cream in a heatproofbowl over a pan of barely simmering water (don't let the base of the bowl touch the water). Heat it through and refrigerate until next day or at least 8 hours. Remember to cover the surface with cling film all the way down in the bowl. Before use, whip it stiff with the vanila sugar added and gently fold in the chopped Dajm.

MineCraft kage/MineCraft Cake
Jeg var vist så utilfreds med denne kage, at det startede en næsten 3 måneder lang hiatus fra bloggen. Nu har dette indlæg ligget og ventet på at blive udgivet lige så længe, men nu er den vist kommet nok på afstand, til at jeg kan grine ad den :)
Apparently I was so disappointed with this cake, that it started a 3 month long hiatus from my blog. This post has been waiting to get published for just as long, but I guess it has finally been long enough to enable me to just laugh at it all.
Jeg plejer at sige, at planlægning er mindst halvdelen af arbejdet, når jeg laver kage, og nu har jeg så beviset på en dårligt planlagt kage. Jeg manglede jo inspiration til denne kage, og havde dårligt nok en idé, da jeg begyndte at bage. Men jeg fik da bagt 2 Mudcakes og fyldt den ene med After Eight Creme, og den anden med Skildpadde Creme og Hindbærmousse. Da jeg arbejdede ud fra løse idéer, var denne kage simpelthen ikke gennemtænkt, og det kan ses:
I usually say, that planning is at least half the work, when I make a cake and now I finally have proof of a poorly planned cake. I was lacking inspiration for this cake as mentioned before, and barely had an idea when I started backing. I did manage to bake 2 Mudcakes though and filled one with After Eight Creme and the other with Caramel-Chocolate Cream and Raspberry Mousse. Since I was working from loose ideas only, this cake was simply not thought through, and it shows:
Jeg kunne lave en alenlang liste over problemer med løsninger, der gav flere problemer, men lad os bare nøjes med at sige at tern er svære, når linier skal flugte både på sider og top. Tern i flere lag, og flere forskellige højder, giver bare endnu flere problemer, men værst var jo nok, at jeg havde fyldt begge kager, og skulle så lave niveauforskydninger i lagkage - det er altså ikke særlig genialt, for at sige det mildt, når man skal dele en kage i lag, og tern højden siger, at du skal dele kagen midt i fyldet (!!!). Resultatet var selvfølgelig en ustabil, og levende kage, som kunne have været meget mere medgørlig, hvis den bare var en fast skærekage...
I could make a long list of problems encountered and solutions that presented more problems, but lets just say that squares are hard to make, when you need lines to meet up at both sides and top. Layered squares and varying heights just adds to the problems, but the biggest problem was that I had already filled both cakes and needed to make different layers where the square size demanded I split the cake in the middle of the filling! Of course the result was an unstable and very much alive cake, which would have been so much more manageable if only it had been a firm sponge.
Drengen var dog som sædvanligt meget glad for kagen, og det er trods alt det vigtigste. Desuden var det rigeligt af velsmagende kager, så hvis vi ikke vandt point på dekorationen, så klarede smagen det vist nok i år:
