Manden mindede mig om, at jeg havde lovet den yngste at bage småkager, og da jeg havde abrikoser til at ligge, som jeg gerne ville have brugt, blev det til disse bløde småkager, som er meget hurtige at lave - hvilket er en fordel, når man har glemt sit løfte:
My husband reminded me, that I had promised our youngest to bake some cookies. Since I had some dried apricots, that I wanted to use, I made these soft cookies, which are fast and easy to make - definitely a plus, when you have forgotten a promise:
Opskrift på Abrikos- og Yoghurt Småkager/Apricot and Yoghurt Cookies recipe: 16 stk/pieces
175 g mel/ 1 1/2 cup flour
1 tsk bagepulver/ 1 tsp baking powder
1 tsk kanel/ 1 tsp cinnamon
75 g havregryn/ 1 cup rolled oats
40 g sukker/ 1/4 cup sugar
35 g mørk muscovado sukker/ 1/4 cup dark muscovado sugar
115 g hakkede, tørrede abrikoser/ 3/4 cup chopped, dried apricots
1 spsk mandelflager/ 1 tbsp flaked almonds
150 g yoghurt naturel/ 2/3 cup unflavored yoghurt
3 spsk solsikkeolie/ 3 tbsp sunflower oil
Perlesukker til drys/ Pearl or decorating sugar for sprinkling.
1. Forvarm ovnen til 190 C.
2. Sigt mel, bagepulver og kanel i en skål. Rør havregryn, sukker og nødder i.
3. Yoghurt og olien røres sammen og blandes i de øvrige ingredienser. Dejen skal være fast, men kom lidt ekstra yoghurt i, hvis det er nødvendigt. Form dejen til 16 kugler, og læg dem på bageplade beklædt med bagepapir.
4. Tryk kuglerne let flade med en gaffel, drys med perlesukker og bag dem i 15-20 min, til de er gyldne. Køl dem af på en bagerist.

3. Mix yoghurt and oil and add it to the dry ingredients. The dough should be quite firm, but add some extra yoghurt if needed. Roll the dough into 16 balls and place them on a bakingsheet with baking paper.
4. Press the balls slightly flat with a fork, sprinkle pearl sugar over and bake for 15-20 minutes, until golden brown. Transfer to a rack and cool off.
Disse småkager er ikke velegnede til opbevaring, og bør spises indenfor et par dage. Ellers kan de fryses ned og er holdbare i op til 4 måneder. Mine overlevede ikke en time og jeg har fået besked på, at det nok ville være smart, hvis jeg tilfældigvis ca ALTID lå inde med abrikoser, jeg gerne vil have brugt. Muscovado sukker kan iøvrigt erstattes af brun farin, eller begge sukker typer erstattes med lys rørsukker og hasselnøddeflager kan sagtens bruges i stedet for mandelflager.
These cookies aren't well suited for storing, and should be eaten within a couple of days. Or you can freeze them and they will keep for up to 4 months. Mine didn't last an hour, and I have been told that it would probably be a good idea, if I just happen to approximately ALWAYS have dried apricots, that I need to use on hand.

Appelsin og Krydderistænger/Orange and Spices Sticks
Så er det vist ved at være på tide at få brugt nogen af alle resterne fra julemåneden - og helst på en sundere måde end vi gør i december. Jeg har alt for mange mandler til at ligge og kom også til at købe appelsinskal et par gange for meget i sidste måned, så i går lavede vi disse lidt sundere stænger:

I have way too many almonds laying around, and somehow managed to buy candied orange peel a few times too many, so last night I decided to make these slightly healthier sticks:
Opskrift på Appelsin og Krydderistænger/Orange and Spices Sticks recipe: (ca 50 stk/pieces)
115 g hakket appelsinskal/ 3/4 cup orange peel
50 g rosiner/ 1/3 cup raisins
5 spsk rom (el. te)/5 tbsp rum
50 g flydende honning/3 tbsp runny honey
50 g mørk sirup/3 tbs dark sirup
1 æg/1 egg
115 g malede mandler/1 cup ground almonds
175 g fuldkornsmel/1 1/2 cup wholewheat flour
1/2 tsk bagepulver/ 1/2 tsp baking powder
1/8 tsk natron/ 1/8 tsp baking soda
1 1/2 tsk kanel/ 1 1/2 tsp cinnamon
1/2 tsk ingefær/ 1/2 tsp ginger
115 g mandler, hakket/1 cup almonds, chopped
50 g flormelis/ 1/2 cup icing sugar
3 spsk appelsinsaft/ 3 tbsp freshly squeezed orange juice
1. Hæld den hakkede appelsinskal, rosiner og rom i en skål. Læg låg på og lad det stå i en time.
2. Hæld honning og sirup i en gryde. Varm op til kogepunktet og lad massen afkøle inden ægget rørest i. Bland de malede mandler med mel, bagepulver, natron og krydderier og rør det hele i honning-sirupmassen. Tilsæt rom-blandingen og de hakkede mandler og form en sammenhængende dej (den er ret tør/smuldret).
3. Tryk dejen let i en smurt bageform (ca 20x30cm) og bag den ved 200 C i ca 20 minutter. Lad den afkøle på en rist. Sigt flormelis i en skål, og tilsæt appelsinsaft lidt ad gangen. Stil den til side i en time.
4. Spred glasuren over hele kagen og skær den i tynde stænger før servering.

3. Press the batter lightly in a greased pan (13x8 inches) and bake at 200 C (395 F?) for 20 minutes. Leave to cool on a rack. Sift icing sugar in a bowl and add the orange juice a little at a time. Leave it to set for 1 hour.
4. Spread the glaze on the cake and cut it into thin sticks before serving.
Stængerne smager dejligt, men pga fuldkornsmel er de også (heldigvis for mig) ret mættende, så jeg kan ikke klemme særlig mange ned. Børnene så nu ikke ud til at have samme problem...

Nye legesager/New Toys!
Så skal der leges! Selvom det tog 3 dage, før jeg havde tid til at åbne min pakke med nye legesager, så glæder jeg mig rigtig meget til at komme i gang igen. Pakken var stor (og tung, som pakkebudet syntes han burde advare mig om, idet han rakte den til mig), og fyldt med legesager til både mig og en veninde:

The parcel was big (and heavy, which the delivery guy figured he should warn me about, as he passed it to me) and full of toys for both me and a friend of mine:
Faktisk så har jeg allerede været i gang med at lege lidt, men glæder mig rigtig meget til at min veninde kommer og henter hendes del i næste uge - så skal vi nemmelig lege lidt sammen også :)
